Try, try again...

Guys. I am trying to master a chicken enchilada recipe for you. About a month ago, I decided to make them and bought Rick Bayless' Frontera Grill Red Enchilada Sauce at the grocery store. Also, by mistake, instead of using refried beans in the first go, all I had was baked beans...I used them, thinking it could be a massive disaster. Let me tell you, though...wow. The flavor profile was spectacular. Two weeks later, I tried to make my own red enchilada sauce and used refried beans. One of these things was not like the other. Unfortunately, for me, the former was the better of the two. Now, was it Rick's enchilada sauce that was so much better? Or was it the use of baked beans in the original one I made? Well...try, try again, I say!


My husband says, "just post a recipe using his sauce," but he doesn't understand that I take this as a massive challenge. I'm working on it. I promise. And when it's finished....ohhhhhhh boy, get excited.


The photos below show the first go and the second. One looks slightly more appetizing...and it isn't the one with the sauce that looks like it came from a baby's diaper...
