Meatloaf with Roasted Pepper Sauce
"Ma! The Meatloaf!" Honestly, how can you not think of Will Ferrell when you hear the word, 'meatloaf?' Way before Wedding Crashers came out, I was a big fan of meatloaf. I'm pretty sure it gets a bad rap because most people have had it where it's like a brick of meat and slathered in ketchup, but I'm here to elevate your version. I promise. My husband and kids love this recipe, and it has a LOT to do with the roasted red pepper sauce on top (which can easily be made ahead and refrigerated). I adapted this recipe from one I found on Epicurious years ago for turkey meatloaf. I should mention that I am not a big mushroom fan, so don't let that deter you from making this. My dad hates mushrooms, and we have snuck this meatloaf on his plate and he didn't even realize there were mushrooms in it (sorry, Dad!).
